Chicken with Cinnamon & Peppers

1 lb skinless boneless chicken breasts, cut into 1.5 inch cubes
1 tsp ground cinnamon
1 tsp paprika
4 tablespoons Olive oil
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 onion, sliced
3 garlic cloves, thinly sliced
2/3 cup hot chicken stock

-Preheat the oven to 400 degrees. Put the chicken in a mixing bowl and rub all over with the cinnamon and paprika, then set the bowl aside.
-Heat the olive oil in a frying pan, add the peppers and onion and cook over medium heat for five minutes (or until they start to soften). Make sure to stir occasionally :)
-Add the chicken and cook, stirring constantly, for about five minutes (or until the chicken is no longer pink).
-Add the garlic and cook one more minute, then stir in the chicken stock.
-Transfer to a baking dish and back for 20 minutes. Best served with a drizzle of chili oil and maybe some greens on the side!

This is really just a different, tasty and easy dish. Not the most amazing thing I've ever cooked but definitely a meal I'll make again :)
